This is a Middle Eastern specialty I made the other day. It is deceptively simple to make, but oh so good. Hummus is basically just a spiced up chickpea puree. As a basis, I used
this recipe i found on a forum, allegedly by Jamie Oliver, though I haven’t seen the original, but added some cayenne pepper and a bit more tahini:
350g chickpeas, soaked overnight
1 small dried red chilli
1/2 teaspoon cumin seeds or ground cumin
1/2 teaspoon cayenne pepper
2 cloves of garlic, peeled
3 tablespoons tahini (sesame seed paste)
extra virgin olive oil, about 4 tablespoons
lemon juice to taste
sea salt, pepper
